No-bake B honey & nut slice

Super dooper easy and absolutely delicious, this slice is a winner each time!

Ingredients

1 ½ cups raw cashew nuts

1 ¼ cups dates, pitted and roughly chopped

½ cup dried apricots, roughly chopped

1/3 cup B honey

½ cup Bega Simply Nuts Peanut Butter Crunchy

½ cup desiccated coconut

160g dark chocolate, melted

1 Tbsp coconut oil

Tips

If you’re not comfortable melting the chocolate and oil on the stovetop, you can put in the microwave for 20 second increments until melted, stirring in between each burst.

Method

  1. Add the cashew nuts to a food processor and pulse until roughly chopped.
  2. Add the dates, apricots, B honey, Bega Simply Nuts Peanut Butter, coconut and 1 teaspoon of water. Pulse until you have a sticky dough. (If the dough is not sticking together add another drop of water).
  3. Line a 20cm x 2cm square pan with non-stick paper and press the dough into the pan. Using damp hands helps this process.
  4. Melt the chocolate with the oil over a double boiler. Spread over the cashew mixture and refrigerate until set. Approximately 2 hours.
  5. Cut into 16 pieces. Best kept in the fridge.
