Method
- Add the cashew nuts to a food processor and pulse until roughly chopped.
- Add the dates, apricots, B honey, Bega Simply Nuts Peanut Butter, coconut and 1 teaspoon of water. Pulse until you have a sticky dough. (If the dough is not sticking together add another drop of water).
- Line a 20cm x 2cm square pan with non-stick paper and press the dough into the pan. Using damp hands helps this process.
- Melt the chocolate with the oil over a double boiler. Spread over the cashew mixture and refrigerate until set. Approximately 2 hours.
- Cut into 16 pieces. Best kept in the fridge.
