Honey Prawn Skewers

Prep time: 20 mins | Serves: 4

Ingredients

24 large raw, cleaned prawns

3 Tbsp B honey

3 Tbsp olive oil

2 Tbsp VEGEMITE Squeezy

2 lebanese cucumbers

2 carrots

ΒΌ red cabbage shaved

2 tablespoons fetta

Lemon, juiced

Sesame seeds to garnish

Method

  1. Thread 3 prawns onto a skewer and place in a shallow dish.
  2. To make the marinade, place 2 tablespoons of B honey, 2 tablespoons of olive oil and the VEGEMITE Squeezy in a large bowl and whisk until combined. Pour the marinade over the prawns. Leave for 10 minutes.
  3. Heat a griddle pan to hot. Cook the prawns for 2-3 minutes on each side or until cooked.
  4. To make the salad, using a peeler, shave the cucumber and carrots into ribbons. Add the shaved cabbage and fetta.
  5. Whisk together the remaining honey and olive oil, with the lemon juice. Pour over the salad.
  6. To serve place 2 skewers onto a plate, sprinkle over sesame seeds. Serve salad on the side
