Honey Gingerbread

Ingredients

3 ½ cups (525g) plain flour

1 tsp baking powder

1 ½ tsp ground ginger

1 ½ tsp ground cinnamon

1 tsp ground cloves

100g butter, softened

¾ cup (165g) sugar

1 egg + 1 egg yolk

½ cup (175g) B honey

Icing to decorate

1 cup Icing sugar

1 Tbsp of water or lemon juice

Tips

Dough can be frozen for up to 3 months and defrosted before rolling out and cooking.

Serves may differ based on your cookie cutter.

Method

  1. In a large mixing bowl, combine the flour, baking powder and spices. Using an electric mixer beat the butter and sugar until light and fluffy. Beat in the eggs and honey and mix until well combined.
  2. Stir through the dry ingredients. Cut the dough into 4 pieces and refrigerate for 30 minutes until firm.
  3. Heat the oven to 180°C
  4. Lightly flour your work surface and roll out dough to ½ cm thickness. Cut out the gingerbread people.
  5. Bake in the oven for 10-12 minutes until golden. Let cool for 5 minutes on the tray before removing to a cooling rack.
  6. For the icing, combine the icing sugar and either water or lemon juice in a small bowl. Mix until smooth. Using a piping bag pipe faces onto the gingerbread people.
  7. Store in an airtight container for 1 week.
