Apple Tarts


Prep time: 30 mins | Serves: 6


1 sheet (160g) frozen puff pastry, just thawed

2 large apples, peeled

1 lemon, juiced

¼ cup B honey

1 Tbsp unsalted butter, chilled

Icing sugar, to garnish (optional)


Garnish with fresh rosemary and serve with a dollop of cream. If you don’t have a mandolin, just peel, core and thinly slice apples.


  1. Pre-heat oven 200°C.
  2. Place the pastry on a tray lined with baking paper and set aside.
  3. Use a mandolin to slice apples into 2mm rounds. Toss apples in lemon juice and arrange over pastry, leaving a 2cm border.
  4. Crimp the edges of the pastry and then brush the apples with ¾ of the honey.
  5. Dot the tart with butter and bake for 20 minutes or until the apples are soft and the pastry crisp.
  6. Brush the hot tart with the remaining honey, lightly dust with icing sugar and serve.
