Method
- Pre-heat oven 200°C.
- Place the pastry on a tray lined with baking paper and set aside.
- Use a mandolin to slice apples into 2mm rounds. Toss apples in lemon juice and arrange over pastry, leaving a 2cm border.
- Crimp the edges of the pastry and then brush the apples with ¾ of the honey.
- Dot the tart with butter and bake for 20 minutes or until the apples are soft and the pastry crisp.
- Brush the hot tart with the remaining honey, lightly dust with icing sugar and serve.
